Hotels
Restaurants
The story of the Airelles brand began in 1988, in the heart of the French Alps, with the Les Airelles Palace in Courchevel.
In 2007, Stéphane Courbit breathed new life into this Palace, and decided to take the innovative Airelles experience and vision to new destinations. The homely and welcoming hotels, each one with a strong and distinctive identity and plenty of history, all offer the immutable quality of exceptional and bespoke service.
Today, the brand is proud to have a presence in iconic destinations such as Courchevel, Val d’Isère, Gordes, Saint-Tropez, Versailles Palace and soon, Venice.
With 23 restaurants, six bars and a beach club, gastronomy is central to Airelles. A cocktail with a view of the Luberon, a romantic dinner overlooking Versailles Palace, afternoon tea among the Alpine peaks, or lunch with your feet in the sand at Jardin Tropezina.
As well as the classics of French cuisine, Airelles also offers an exceptional diversity of international cuisine. In its bars, as well as stocking a range of rare spirits, fine wines and champagnes, Airelles has also come up with a series of Signature Cocktails to reflect the individual spirit of each hotel.
Ladurée
Louis Fouquet
Liberté
Pedone
The story began in 1862 when Louis Ernest Ladurée opened his bakery at 16 rue Royale in Paris.
After a fire, the place was reborn as a patisserie decorated by Jules Chéret, inspired poster artist.
During the Belle Epoque, the brand opened one of the first French tea rooms in the capital.
Then in the 20 th century, Ladurée brought the Parisian
macaron to the scene, which soon became the brand’s icon.
For more than 160 years, Ladurée has been synonymous with excellence and been hailed as an example of high-end French patisserie throughout the world.
Louis Fouquet, Parisian chocolatier and confectioner since 1852, has a rare artisanal approach, dating back through the generations which has led it to become world renowned in the French gastronomy arena.
Louis Fouquet is a family story of five passionate generations, who have passed their traditional secret recipes and expertise down to the next.
It’s also a story of alchemy, of a constant search for perfection, evident in the unique taste of brand’s creations.
Named as an Entreprise du Patrimoine Vivant (current heritage business), Louis Fouquet makes all of its chocolates and confectionery in Paris and in Ile de France region, working in a way which is ethical and responsible both socially and environmentally.
Established in rue des Vinaigriers in 2013, this baker-patisserie Liberté revolutionised workplaces where architecture and artistry meet with typically French savoir-faire.
In 2023, Liberté continues to grow with six locations in Paris and two in Japan. The brand is furthering its development by offering its artisanal expertise and bespoke design: founder Mickaël Benichou invites clients to an immersive experience where their work can be seen and is accessible to all.
Each beautiful item is made in a contemporary and inspiring setting.
It all began in 1959. Of Italian origin, Pascal Pedone started selling his first "extra-fine" ice creams on the streets of Charenton, using a simple tricycle.
The sales quickly grew, and Pedone's ice creams were served in the finest restaurants in Paris.
In the late 90s, his son Christophe decided to carry on this ice cream-making expertise, with a focus on innovation and modernity.
